Rendang curry is typically made with beef but you could also use lamb or chicken thighs. For a vegetarian version, add squash, chickpeas or cauliflower.

Serve your curry with jasmine rice and steamed greens. A cucumber, lime and onion relish is a delicious accompaniment, adding freshness and acidity.
