Maison Bremond’s calissons recipe has remained the same since 1830: a soft, golden mixture of candied melons and crushed Provençal almonds on a thin wafer base. Each candy is then topped with a thin layer of royal icing which gives them a sweet, crunchy coating. Serve them after dinner with coffee or enjoy with a mid-morning cup of tea.
