White hominy corn is a staple in Mexican and Latin American cuisine. Made from dried corn kernels (maize), it has a rich nutty taste. Hominy is used to make traditional dishes like soups and stews. 

Hominy is the key ingredient in pozole, a popular Mexican soup. Made with pork and dried chillies, the savoury broth is full of flavour. It’s served with a wide variety of garnishes to be added at the table. Load up your bowl with sliced avocado, coriander, shredded cabbage, onion and lime wedges.

To prepare your maize for pozole, soak the kernels overnight in cold water. Drain and add to a large pan with a halved onion, halved bulb of garlic and 2 bay leaves. Add fresh water to cover, bring to the boil then partially cover and reduce to a simmer. Cook for around 2.5 hours or until the maize kernels are soft.
