Spaghetti alla chitarra originates from Abruzzo in southern Italy. Its name means ‘guitar’ in Italian – a reference to the wired frame used to cut the long, square strands. It’s slightly thicker than regular spaghetti. 

Spaghetti alla chitarra is delicious with all kinds of tomato sauce. Try spicy arrabiata or puttanesca flavoured with garlic, olives, capers and anchovies. It’s also good with seafood such as clams or scallops.

Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.
