Shiro white miso paste is a fermented bean paste used to make miso soup and marinades for fish. It is an essential ingredient in Japanese cuisine, adding a burst of umami to stir-fries and salad dressings. Less salty than red miso, it has a sweet-savoury flavour that works well with tofu and light sauces. 

Mix white miso paste with butter to baste roasted vegetables or blend with soy sauce and sesame oil to make a delicious glaze for chicken thighs. It’s fantastic with cod and grilled aubergine, too. Try adding a spoonful to cheese sauces for pasta and nachos – the miso paste brings out the nutty sweetness of the cheese.
